A gentle taste is the opposite of an overpowering one. Yes, it normally characterise the wine taste rather than the procedure of tasting. But it would work I think. "call for a gentle testing"

: 'gentle' tends to beg the question what an 'aggressive' tasting might be like? And 'tasting' rather undervalues 'dégustation', which often means simply 'enjoy drinking', i.e. not in any kind of 'sampling' way (which it does in EN)

: I don't think the 'colour' would particualrly make you think about the 'mouthfeel' — this really sounds more like tasting notes than (what I assume is) a purely marketing text?
