Dubák (hřib dubový)(Boletus reticulatus) není hřib smrkový neboli pravý neboli bílý (Boletus edulis). Mashroom není v češtině hřib, ale houba. Žampion není hřib, ale je to houba. Neplést prosím.

or just to make it sound really fancy: 'sauce aux cèpes' . Posh restaurants like to use French versions if they can, e.g. 'Doigts de poisson avec pommes frites cuites à l'anglaise'

I would prefer not to include the latin or any other name of the mushroom if it is to be part of a restaurant menu, it will just be confusing for most guests, as they probably don't know this specific mushroom, anyway. Latin is expected from doctors/lawyers rather than waiters, I guess.

Personally, I think it is important that a reader of the menu knows immediately that it is a mushroom sauce, in a busy season the waiters do not like to be bothered with the what is what type of questions, IMHO

Jiří Perhaps you remember that for a long time we had not known what žampiony were, i.e. from practical experience, and that, to my knowledge, houbová omáčka byly pouze a vždy hřiby. Your reference is to a Californian species of boletus, unless I am mistaken.

It seems that Italian for hřiby is porcini. This had become a common culinary term in the USA in the last five years or so, but mostly refers to imported dried mushrooms. Considering that it may very well be the cause with the meal in question, think about using the term "porcini sauce".

This is English version of a Rumanian menu, but why not?
Evidently the king bolete is a widely used term.

Lately, italian dried porcini (their name for hříbky) have become a common occurence in US markets. (I am not sure about Britain) You may consider calling it "Porcini sauce" - that sounds pretty good.
