Die Hummerschwanzscheiben auf Tellern verteilen, mit Salz und Pfeffer abschmecken und mit Zitronenmarinade bepinseln. Tatarnocken auf das Carpaccio legen. Anschließend die Basilikum- und Kerbelblättchen mit ein wenig Zitronenmarinade vermischen.

The websites do offer a huge variety in spelling for tartar(e), Tartar(e). I would say, you could also go with "lobster tartare and caviar quenelles" or "quenelles of caviar and lobster tartare." Whatever fits UK usage best ... :-)

One way around it might be to phrase it as: " (ingredient) Tartare quenelles" (what are they made of--lobster, fish, veggies?

Andrew, the sites seem to use a capital letter in the name of the recipe itself. Then lower case is used in the preparation descriptions. I rather think without "e" in English.

Thanks to all four answerers plus Craig for gnocchi. This was a cookery question, so something French-sounding definitely has the edge. Everyone knows what a round/mound/dumpling looks like but in haute cuisine it is important to retain that element of haughty mystery, that certain ‘je ne sais quoi’…

Dear MM, yes I have more context. The whole recipe. I think your suggestion (‘balls’) is promising and the first answer in seems to confirm this.

There are a few sites with "tartar quenelles" that are not simmered, nor cooked in any way....perhaps this suggests the shape in a more elegant way...

I'll break ranks here and provide a forma answser. 'Mounds' is only to point you in the direction; it's probably to inelegant.

Of course, it could be gnocci-like forms, but Nocke = cam and Germans love to name things by their shape.

rounds of (fish) tartare

Can we safely assume that people know what tartare is? If so, then simply tartare if the concoction is beef based (as is carpaccio) or fish tartare if based on fish.

Rounds will allow you to be unspecific, with a choice between either flat disc-shapes or something formed into small balls.

It might fit the bill!

Notable were the Tuna Tartare dumplings, Lobster Dumplings with truffle soy, and the Sea Bass rolls with ginger. According to our waitress, the pastry chef is “an inspired man” (though she couldn’t name him!), but we did not leave space in the end to confirm this. I do sense I will be back though.
