This is what I would use here; it clearly refers to a single transaction, since a time and date is given, so it must refer to one bet, so "Unfortunately we have to reject/void your bet placement of/ your bet placed on...", or a similar wording.
Meanings of "einstellen" also include "call off, stop, cease" etc., and given the context, it is clear to me that one of these is meant.
