Es el mismo manual para empleados que en la pregunta anterior, les está indicando cómo servir las mesas; inglés de los EE. UU.

Para mí la oración necesitaría un subtítulo del tipo "ajuste del servicio/de la cristalería y cubiertos" o algo así. Marcar los lugares de la mesa sería otra cosa.
Lo que me desorienta es que viene de dedicar varios párrafos a cómo presentar, descorchar y servir el vino, y en esa parte era sumamente preciso y acertado... ahora no sé qué pasa. ¿Será un problema de "cortar y pegar" o hay algo que no estoy viendo?
¿Alguna idea? Gracias otra vez, especialmente por respuestas con explicaciones.

It refers to the practice in high-class restaurants whereby the staff are forever moving things around on the table so it’s clear to all the staff what needs to be done next, who is eating fish and who is having steak, etc.
Some of the more obvious forms of marking are also intended to ‘steer’ the guests elegantly through their meal. The source text seems to be more concerned with this aspect: marking helps to ensure the guest doesn’t end up in the embarrassing situation of trying to use a fish knife to cut steak, or stir coffee with a soup-spoon.
