@Lara Ok, I see. As I said before, I am not familiar with English ice cream naming. My point was that the term "full fat ice cream" may suggest there is no "full fat" in other flavours, which is not the case. I think that leaving "fiordilatte" would be the best option in this specific case.

Cristina ha ragione la vaniglia non appare nelle ricette tradizionali.

Gelato fior di latte

Ingredienti: 3,5 dl di latte, 2 dl di panna liquida fresca, 100 gr di zucchero, 1 albume.

però ho visto che c'e' come al solito confusione, alcuni siti indicano il fiordilatte come gelato alla vaniglia (ma non sono siti italiani in generale:)

@ katiadegennaro Full fat ice cream / pure dairy ice cream is also a base for any flavour of ice cream. The fact that it is full fat or described as pure dairy does not disqualify it from being "the base for many other icecream flavours" .

Fiordilatte is simply the base for many other icecream flavours:

BASE BIANCA
Si tratta della miscela priva di uova, che da' origine anzitutto al gusto fiordilatte,e per aggiunta di ingredienti quali canditi,croccante,meringa sbriciolata e frutta secca,ai gusti di cassata croccante meringa,noce ecc.e per aggiunta di frutta fresca,a pezzetti o in purea,ai gusti cremosi alla frutta. ... La base cosi' preparata corrisponde al gusto fiordilatte,che in genere viene aromatizzata alla vaniglia.

Butterfat "Fiordilatte" is "butterfat" but you might run into trouble if you translate it that way here. Butterfat content is an important parameter of all ice creams/gelati and wouldn't really be appropriate as the name of the dish. Cristina and Chiara's "gelato fiordilatte" sounds good to me, perhaps with an explanation ("made with top of the milk"), otherwise Laura's "milk ice cream" is fine.

Context You must watch it! Fiordilatte can also be a type of mozzarella (http://en.wikipedia.org/wiki/Mozzarella). You need to give the context.

Fiordilatte On a refined menu, I would leave fiordilatte and even replace ice-cream with gelato, as ice-cream contains more cream than Italian gelato.

I agree with Caterina! I don't know much about English icecream naming, but fiordilatte does not contain vanilla, and I assume that an ice cream flavour named vanilla in English would contain vanilla.

é un gusto tipicamente italiano. Non lo tradurrei, anzi sottolineerei la particolarità tutta nazionale del gusto non traducendola. Un po' come spaghetti o lasagne insomma!

I have often seen milk ice cream on menu's at fairly fancy restaurants. Please see link below for an example. HTH

Thanks Shera Lyn - it does have vanilla, with the lemon tart, but also has milk further down with the Chocolate Marquise.

Isn't this the same thing? Some people also say "Bourbon vanilla" to make it sound classier....

I guess some do leave it as "fior di latte" - depends on who you're writing for. Might be good if you want to make it sound mysterious :)

I've always considered "crema" to be custard (with eggs in the mixture, that I think is the primary difference) so gelato alla crema would be frozen custard http://en.wikipedia.org/wiki/Frozen_custard or custard icecream.

Yes, I have thought of that, too. But I also have "gelato alla crema" which is usually translated by "vanilla". Maybe we can use "vanilla" for fiordilatte and find something else for "crema". Do you have any ideas?. Thank you

disagree Joel Schaefer : As discussed, vanilla is a specific ingredient and flavor which would be identified as vaniglia. This fiordilatte seems to be without an added flavoring.

In the United States, "vanilla" is usually "fiordilatte" and "French vanilla" "crema".
However, we also have "vaniglia" in Italian, so some people suggest to leave "fiordilatte" untranslated (see previous post).

Vanilla ice cream is made from milk and cream, with no eggs ("fiordilatte").
French vanilla is richer and should include egg yolks (like "crema").

There are several variations on the standard vanilla flavor, including a particularly rich and creamy variety called French vanilla. French vanilla is more of an egg custard before freezing, and contains egg yolks for a richer consistency.

I think that "French vanilla" is a popular flavor in the UK as well:

Yes, in UK English they say "courgettes" for "zucchini" and "aubergines" for "eggplants", so why not "French vanilla"?

full fat ice-cream / pure dairy ice-cream

The "fiore" before the milk(latte) gives the impression of full bloom. I am sure that this is describing the real old fashioned sort of full fat ice-cream as it was traditionally designed, as opposed to low calorie, sorbet, vegetarian or other sorts.

The technical word for this is "full fat ice-cream" which would be well understood by anybody who loves their "real" ice-cream. "Pure dairy ice-cream" would also work, if "full fat" seems a bit banal for a menu, as this is what it is.
