Para resumir, a "Proof degree" também se chama "proof number", "proof spirit", "proof strength" ou até simplesmente "Proof".
Creio que a tradução técnica e específica para PT é "Prova de Álcool" ou "Prova Alcoólica" (vd links 12 e seguintes).
No seu caso específico (creio que é o link 1), creio que esse "Proof degree" é o "grau de Prova" (também por comparação com os "Baume/Plato degree", que creio são chamados "grau de Baume" e "grau de Plato").
