I can't find many references to lithiasic disease, would perhaps simply lithiasis be a better choice, or something else?

I don't see why in the query question, we can't just use the more common and less highfalutin' "stones/calculi" :

La patología litiásica es la causa más frecuente... -> Stones (calculi) are the most frequent cause...

I think using the Latin "calculi" achieves the same effect as "patología litiásica" does in Spanish.

agree Joseph Tein : I like "calculi." Since the source doesn't specify, I wouldn't add anything about gallstones (although it seems that gallstones often cause pancreatitis).

En el contexto dado creo que la referencia específica resulta ajustada (y utilizada habitualmente en textos en inglés) -versus simplemente stones or calculi, aunque en el contexto dado podría asumirse que, igual que en castellano, el origen biliar de los mismos se sobreentiende.
Bile duct stones might also work in this case; also gallstones and bile duct stones.
Stone disease se utiliza habitualmente para referirse a litiasis renal, lo que no resultaría ajustado en este caso; en cambio bile duct stone disease probablemente resultaría más apropiado en este caso, aunque como ya mencionado, podría sobreentenderse tal vez la referencia a biliar por contexto. Gallstone disease is a common denominator, equivalent in this case to patología litiásica.
