Calibrate doesn't mean in education the act or process of determining, checking, or rectifying the settings or gradations on a measuring instrument or other piece of precision equipment. In education it means peer review.
But it is not so clear in this context that the students are calibrating coffee or conducting peer review (calibrating)?
If they are conducting peer review Сверять друг с другом свои впечатления/оценки (от кофе) makes sense,
If not, они калибруют кофе или настроит чтоб получился хороший вкус и конечно сравнивая вкус между другими

Здесь я больше полагаю речь идет о калибровки / настройки кофе вместе и потом идет "are evaluated on their alignment with other course participants." и они оцениваются по их соответствию другим участникам курса.
