It sounds as though your text is about artillery, judging from the use of the term "gunner."

adjusting the height, up or down

I think it could be either up or down, as in adjust the height...

elevation: a measurement of vertical distance in mapping.

Elevation The angle in degrees above the horizon toward the zenith or overhead point. Sometimes loosely called the "altitude" of a star, but not to be confused with height above sea level. Elevation angle is 90° minus the zenith distance (or zenith angle). [McL97

ELEVATION
The measure of height with respect to a point on the earth's surface above mean sea level. Sometimes referred to as station elevation.

upward movement only.

'elevation' refers to upward movement only and 'declension' refers to downward movement only. Depending on the context you could also substitute 'raising' or 'to raise' but in this case the term used to refer to the angle of the barrel AND the raising thereof, is 'elevation'. You can say 'an elevation of XX degrees' or 'to elevate the barrel to XX degrees'. HTH.

agree chica nueva : Yes, It must be 'in elevation', so that means 'you cannot lower the elevation lower than 0'; assume that 0 is the horizontal. In real life must be above 0?

1 the angle of a gun with the horizontal; 2 in elevation = above the horizontal

1 is quite clear, the angle of a gun with the horizontal (Dictionary definition, Collins Concise English Dictionary)

2 'ending his lay in elevation' is less clear

This is my guess:

a 'his lay' - probably a technical term, for the 'positioning'.

b 'in elevation', I think, must simply mean, 'above the horizontal'ie the barrel must point upwards. (If it is at or below the horizontal, I guess the ammunition will not travel correctly, in an arc...)
