industrias que despiertan el interés

Creo que el hecho de que sean "interesantes" es adecuado.

Pero el matiz que aporto es que no solo son "interesantes" de forma "pasiva", sino que como tales, inspiran a los estudiantes a interesarse.

Creo que le da el matiz de "entusiasmo" que generan.

Industrias que estimulan un interés genuino...

industrias interesantes

Me parece bien tu opción. Pensé quizás en "industrias apasionantes", para darle un poco más de fuerza, pero no es una colocación muy común y tal vez sería demasiado.
