In my opinion it depends on whether the rest of the text discusses (1) the products or (2) the sales value ($$) of the products. I assume there is also a category "Ventas con una cierta estabilidad."
If the text that follows these titles discusses the products, I would say:
"Products with a consistent sales pattern" and "Products with an erratic sales pattern."
If, alternatively, it discusses the value of the sales, I would say:
"Sales from products with consistent sales patterns" and "Sales from products with erratic sales patterns."
