yes, you can say during the week of. the date chosen is usually a Wednesday in order to refer to the span of time.

during the week beginning

I've never heard of Wednesday being used specifically. In English we tend to talk about the "week beginning". If we're talking about this year, it would be "the week beginning 27th May".

It may be that the 29th holds some special significance in your text, though.
