Spanish term or phrase: profesionales del texto
Context: Tanto en editoriales como en centros educativos hay profesionales del texto que echan de menos una formación más específica sobre el mundo de la gráfica. También hay directores de arte, diseñadores, ilustradores, fotógrafos… interesados en el ámbito de la palabra. Sin embargo es frecuente que signo y significado se enseñen separadamente.”

writers and editors

Explanation:
I don't think we have a single term for this. "Text professionals" is not much used in English, unfortunately, and is not idiomatic. "Profesionales del texto" refers to editors more than anything else, but it covers journalists, writers, editors, copy editors and translators. You and I are "profesionales del texto" too! The trouble is that listing them all will be a bit long, and I think you can cut it down to writers and editors, but no further than that. This would cover journalists too. You could add "translators" if you like, but in this context I don't think it's really necessary.

By the way, I don't think you need to add "professional" in English; it's taken as read.

It mentions "profesionales del texto" in publishers and educational institutions. In the former, at least, they will mostly be editors and copy editors in practice; not many of the people working in publishing companies are writers.

professional wordsmiths

Explanation:
This has the advantage of being very nonspecific, as it refers to anyone who writes for a living.

agree  Karen Dinicola: I like this one very much, too. It's a nice catchall term. As a potential glossary entry, this could be very useful.

neutral  Charles Davis: I don't really disagree with this, but "wordsmith", to me, is a somewhat quaint and old-fashioned word, which the Spanish term isn't. Moreover, "wordsmith" normally implies a writer, and it's not a word you would usually apply to an editor.

agree  neilmac: On this rare occasion I'm afraid I disagree with Charles. Just as a smith transforms metal, I transform words. One man's quaintness is another's charm :)

writing professionals / publishing professionals

Explanation:
If it refers to writers and editors, this is how I'd say it. However, given the context, I wonder if it could mean "publishing professionals".
