Preheat the oven to 180°C/gas mark 4. Line two baking sheets with greaseproof paper or silicone sheets. Split the vanilla pod and scrape the seeds into the mixer bowl. Add the egg whites and whisk with the wire whisk on speed 4 until frothy. Increase to speed 8 and beat in the cream of tartar until **soft peaks** form.
