It's the word 'institution' that I'm interested in here. The oldest UK mutual insurer, EQUITABLE LIFE, describes itself as a 'society' and goes on to explain, on its website:
"The Equitable Life Assurance Society started life in 1762, based on the inspiration of a man ahead of his time – James Dodson. The Society was established as the first mutual life assurance company, set up and run for its members and continues to run as the oldest mutual life assurance company in the UK. "
You'll also notice that they use the term 'assurance society' rather than 'insurance'.
