My dictionary says: to stew, simmer, sauté or braise (for refogado) - how confusing is that? I think these words take on specific meanings in usage, which may even differ from culture to culture.

This is fun...I love to cook! For me, braising is when you brown the meat in the pan and then cook it in its own juices. With stewing, you add more water, and vegetables and stuff.

Hmmm, I don't believe "braise" involves boiling water. Check this out from Dictionary.com:
to cook (meat, fish, or vegetables) by sautéeing in fat and then simmering slowly in very little liquid.

Arroz e refogados are two different items in the context. The equipment is used for rice and braised food. It applies to vegetables, rice and braised food.

OK, I would use the word "braise" for the meat, but not for the rice, even though Dictionary.com says you can use "braise" for meat, fish or vegetables. Well, I guess rice isn't a "vegetable," strictly speaking - it's a grain. I'd use "sautée" for rice.

Yes, I do. I heat some oil in my sauce pan, add the rice and some garlic, fry it slightly, add hot water and let it cook for approximately ten minutes.

Thanks, Marlene, that's what I thought the word "refogado" meant, but the above definition seems to imply otherwise. In that case, it's definitely "sautéed."

But I agree with you that the text is kind of strange as it starts describing a boiling process and then just throws in the word "refogados" at the end...

OK, it's all a bit murky, because you can sautée rice when it's part of another dish, but the explanation above is referring to food cooked in boiling water, which is not a sautée.

Continuing...you don't sautée rice, for instance, you boil it. Anything cooked in a pan with boiling water is considered "boiled."

The explanation above is a description of boiled food. Even though one of the definitions in my dictionary is "sautéed," the above description is definitely not of sautéed food, which is usually vegetables cooked in a wok or pan with some oil.
