Admittedly the fare and accommodation in general can be rather simple if it's well off the beaten track.
If it's a cabin in the Alps that's being talked about, I'd think this term would make sense to a lot of people.
If the accommodation aspect doesn't play a role, 'restaurateur' might substitute 'landlord'.

I see the \'Huetten\' in Switzerland are translated as \'huts\' quite often at Google:

There\'s even mention of \'catered chalets\' = with catering provided then by a \'caterer\' (but his being a person who also provides accommodation would be lost with this one):
