agree Dave Henderson : I like "techniques": revolutionising culinary techniques sounds right, whereas revolutionising knowledge seems more than slightly off to this ear. Better knowledge would be the result of revolutionised techniques.

[to freshen up] the ideas and the palate

the unity between the two words which gives the play on words in Italian could also be transferred to the verb, as in the attempt above. All good fun anyway.
