Perhaps these are numbered notes accompanying instructions and illustrations or possibly a patent application showing how some device fillets salmon?
If these do accompany a patent or other some other illustration of this process, then "Flanke im Schnitt" might well translate as the "side in cutaway view"
"X im schnitt" commonly includes the idea of "Ansicht im Schnitt", which translates as "cross-sectional/cutaway perspective/view"
