emphatically: balyk can be, and is!, made of any fish, not only sturgeon. It is as, if not more, often made with salmon, see bass, hallibut, et al.

Для меня словосочетание "балык из свинины" звучит точно так же как, например, "виноградное вино из яблок" или "морковный сок из помидор".... Однако балык не из рыбы живо напомнил фальшивого зайца из "Двенадцати стульев".

ведь по определению http://www.kuharka.ru/dictionary/22.html, балык не что иное как "варено-копченая свинина, которая изготавливается из длинных кусков вырезки"

I agree with LanaUK, these must be meat products, not fish.
