I'm not sure the distinct romantic vibe of this character is captured with 'troubadour', and feel 'serenader' would work better here. 'Spellbind' or 'captivate' could also work well instead of 'mesmerise'...

Nobody says "troubadour" in English for this kind of exploit. It's too bad that they don't cite "el Trovatore" either, but they don't. English speakers do use the expression "Don Juan." "Catches them by surprise" would be the most literal finish, but "sweeps them off their feet" would work as well (as by doing so, the poor girls lose their balance). If you dare to embroider the line, "sweep them off their feet before they know what's happened / before they get wise to my mechanics" would also get the message across.
