Hello,

This is an ingredient in a salad:

"Entre terre et mer:
Salade, tomate, pommes de terre à la crème d’échalote, saumon mariné, crevettes décortiquées, pommes citron, noix, croûtons"

Is there supposed to be a comma after "pommes" or does this mean something in particular?

Louisa, I am actually leaning towards the missing comma. If you feel like the apple type fits, perhaps look at the popular "Zitronenapfel" from England called "Golden Noble": https://fr.wikipedia.org/wiki/Golden_Noble ; https://www.orangepippin.com/apples/golden-noble . The Usterapfel ("Zitrönler") seems to mainly be popular in Zürich. A very short description might be best; I am not familiar with any of these types.

I think mrrafe made a good suggestion. Soaking apple slices in lemon juice to prevent browning alters the flavor, so it should be specified (some people strangely don't like lemon). Maybe 'lemony apple slices' for a menu.

Hi, I found these links. The first translates it as an "Usterapfel" in German, and the second link is an English text about the "Usterapfel" not translated. It is apparently an apple variety from the area of Uster, in Canton Zurich, Switzerland.

(Revised comment, sorry) I don't know any pomme citron, mais devrait utliser du jus de citron a preventir l'oxidation et decoloration des morceaux de pomme apres qu'ils sont coupes.

Uster apple

Apparently it is a variety of apple - like 'green', 'Granny Smith' - and from the images I found I assume it gets the name 'citron' because it is yellow. But it comes from the region of Uster in Switzerland so I think often the German name is used.

neutral mrrafe : There so many yellow apples that I wouldn't presume a Swiss one is appropriate. In US, most yellow apples are Crispin or Golden Delicious. https://en.wikipedia.org/wiki/List_of_apple_cultivars
