Callos de bacalao

Non-PRO Spanish to English Other Cooking / Culinary Fish dishes
SPAIN. I know that bacalao = cod and that callos = tripe/guts/innards, but surely there must be a more appetising way of translating it?

@neilmac Sorry to hear that. I think you're missing out. I confess I would be (a lot less) less sure about TINNED tripe. Did the dog enjoy it? No ill effects - even after all that time?

@Rick Maybe it's just a personal foible, but I can't stand tripe, and even just looking at it gives me the wibbles. A French friend of mine once gave me a tin of "callos", (meat, not fish"), which eventually sat in the cupboard for several years before I gave it to the dog.

What's wrong with "cod tripe"? Can approx. 624,000 Google hits ALL be wrong? It is true that most (of the first few. I have NOT checked them all!) appear to be translations from Spanish, but the use of the word "tripe" does not, in my opinion, make the names of the dishes or their recipes offputting. (But then again, I quite like tripe. Maybe you don't... (rising intonation)

I apologise for the lengthy answer but I was going to prepare some info for the reference box and I accidentally came across the proper term - cod soiunds.

Just one note. Cod tripe is not exactly the cod's tripe but the cod's natatory bladder.

As a young fella I was a fairly hearty eater, but "cod sounds"—fish swim bladders—didn't look like fish, or anything edible. We had them on occasion when I grew up in the 70s and 80s. I was used to seeing filets, but I had never seen anyone harvest them before. I thought, Oh cool, another part of the fish we can eat!

The Sound is the swim bladder of many of the bony fishes. Fish that have a skeleton made of cartilage instead of bone don’t have bladders.

Fish Tongues are almost always attached to the bottom of the mouth, so they don’t protrude. Tongues have a jelly-like texture.

Apparently "cod tongues" are not actually tongues, but cuts from the back of the head/neck area. Interesting.

Where I come, we call blood sausage "black pudding" (from the French "boudin". I don't think I'd order "blood sausage" from a menu.

codfish tongues

In Portugal we have "línguas de bacalhau". I compared the images of "codfish tongues" in English and they area apparently the same.

The first Google hits are from Portuguese websites, but you can find Norwegian and English websites with recipes for apparently the same food.

neutral Rick Larg : Sorry, but "belly" gives me to understand the flesh on the lower part of the fish, not its innards. The first recipe you quote would seem to indicate the same:"1 cod belly, large, skinned".
