That's pronounced, "Hi, cheezu (hai, chiizu)." Interestingly, we also use "cheese" to smile for photos. "Hai" really means, "yes," or "ok," but used as a set phrase here always.

This is what the camera person would say, which is nothing to do with cheese. However, nowadays many Japanese would know this English, then the cameraman would say
「チーズといってください」
The ( ) part you can omit if you wish to be more casual.

: "Hai cheese" is so well embedded into Japanese culture now I would say that almost anyone says this now.

: Yes, almost always "hai cheese", not just "cheese."
