ハイ、チーズ

That's pronounced, "Hi, cheezu (hai, chiizu)." Interestingly, we also use "cheese" to smile for photos. "Hai" really means, "yes," or "ok," but used as a set phrase here always.
Peer comment(s):

agree Kurt Hammond : "Hai cheese" is so well embedded into Japanese culture now I would say that almost anyone says this now.

はーい、笑って(ください)

This is what the camera person would say, which is nothing to do with cheese. However, nowadays many Japanese would know this English, then the cameraman would say
「チーズといってください」
The ( ) part you can omit if you wish to be more casual.

チーズ

はい、チーズ。Then, they will smile. They may make a peace sign with 2 fingers as well.
Peer comment(s):

agree Kurt Hammond : Yes, almost always "hai cheese", not just "cheese."

agree Mike Maynerich : With or without the Hai is very common.
