je ne pense pas que l'on puisse utiliser un mot apparenté à aplanir car il ne s'agit pas d'aplanissement mais de creux. On peut donc les appeler soit encoche, c'est dire la partie creuse, soit par crêtes, la partie pointue.

Im not sure there would be a perfect match for this kind of little details, but applanissement sounds like a logical and clear match to me
