Yes we can. The expression "map out" is not only meant for act of physical mapping (map making) but also used figuratively.

"mapped out the evolution" would be more suitable
I am not a native speaker, so my confidence level is low. However, seems to me the verb "map out" is normally used with evolving rather than static items (as in Mike's example above: "map one's future").
