the person who beat the company to an untapped market = the person who discovered a new market before the company did. An untapped market is a product or service that has the potential to yield a handsome profit. In the example below, "yellow-fleshed potatoes" that were disease-resistant weren't sold in the US until someone discovered a way to grow them.
Yukon gold potato history
Yellow-fleshed potatoes are common in Europe and South America. In fact, yellow flesh potatoes are actually considered the norm in most countries outside North America, so naturally, immigrants to North America were accustomed to and preferred potatoes with yellow flesh. This untapped market was begging for an enhanced, disease-resistant gold variety easily grown in North America.

: Of the offered answers, I like this one best. Though I'd say it's not "any" company but Company X, and not "a" person but Person Y, in this context. The person could be internal but is probably a former employee or competitor.(Else "The Company"=CIA!)

Thank you Deborah. The way I understood the phrase is within the notion of "person VS. company", i.e. this Person (a conrete person, sure) beat the Company (any business) to the new market. Opinions differ! ADDED: hmm, wasn't aware of that!

: i'd guess a market is more than a population - it's a new product or service that meets (more or less) popular demand

: Yes, though since markets are "addressed" rather than "utilized", I'd say "addressed".

: "Niche" is nice but we can't tell from the text that it was a niche market. All we know is that it was untapped. It could have been the market for a common item in a new part of the world.

that's right, niche is a proposal, it may apply or not to the situation
