Il n’y a pas que le filet américain, le pavé de viande rouge, ou l’onglet.

Les Belges les ignorent bien souvent et donc ne peuvent les apprécier. Et pourtant !
Quoi de meilleur qu’un ris de veau, ou un rognon bien préparé (mais ce sont les seuls abats qu’on trouve encore aisément) ? Ou des oreilles de cochon grillées et finement tranchées ? Ou un pot-au-feu de joue de bœuf ? Ou des croustillants de pieds d’agneau ? Ou un pavé de foie de veau rosé à cœur ?
Ce n’est pas un hasard si une ville comme Lyon offre toujours un grand choix d’abats dans ses restaurants. Lyon est une ville d’épicuriens, une cité du savoir-manger.
Il semble que les Belges, à cet égard, aient encore beaucoup à apprendre. La preuve : les dernières triperies ont fermé leurs portes.

No, Julie, the 'pied de porc fricassée' is nothing like prokj scratchings at all (nearest equivalent to scratchings = grillons).
This 'accompagnement canaille' is very clearly an accompaniment to the seafood platter, and not a separate dish as such. See the exact way it is used in the ref. I gave
