sapori lenti Ho avuto conferma dal clienti che era un typo. Si tratta di sapori lenti. Cosa mi suggerite?

I don't think it's a typo - I understand it as meaning protecting those practices and pieces of wisdom handed down from generation to generation.

Great, I posted just as Romina says it IS a typo! :-(

I assume the whole piece is something to do with "slow food", so you need something different for this phrase. How about "safeguarding slow-developing flavours"?
