referring to mentum/genial/genian/mental
The medical term is mentum; populary term: chin
Mentoniero: relativo a /situato nella regione del mento
Il mento è la prominenza localizzata all'estremità inferiore della faccia, corrispondente alla parte inferiore dell'arco della mandibola.
Chin: medically, the mentum. The lower portion of the face below the lower lip including the prominence of the lower jaw and the line of fusion of the two separate halves of the jawbone (mandible). This line of fusion (called the symphysis menti) encloses a triangular area at tip of the chin (termed the mental protuberance). On each side, below the second premolar tooth, is the mental foramen, an opening for the passage of blood vessels and a nerve that supply the chin.

: etymologically correct, but one wouldn't say "mental stimulation" or "genial stimulation" here IMO - what is left and right then? we don't have two chins (normally ;-))

anatomically, the mentum is not the mandible, IMHO//obviously not, but we still refer to the left/right side of the mentum, don't we? ;-))

Chin rests
Your explination really does not make clear how the word is used in the source, but the use of the term chin rest when speaking about dentistry aparatus is menoniera (it's also the same word for where you rest your chin rests on violins).
