Here's a menu item: "Terrina de Cochinillo Lechal con **Gástrico** de Hierbas Salvajes y Blinis de Tomate Concase y Espárragos verdes trigueros". I've never seen this word used like this. Thanks for any suggestions.

Thanks to all and Merry Christmas! It's basically akin to the sweet-sour sauce recipe I know, except for the part in the Chinese version where cornstarch is added in the end, failing time for due reduction (restaurant cheats). |

OK, I'm going to stick my neck out and offer this as an answer. Refs. in discussion; viz. the cochinillo recipe link provided by Parrot and this definition posted by me:
AGRIDULCE.- Una salsa salada-azucarada, un gástrico, se consigue reduciendo vinagre de vino con azúcar. Se deja reducir hasta obtener jarabe, es decir cuando se evapora casi todo el vinagre.
