Spanish to English Other Cooking / Culinary menu
Here's a menu item: "Terrina de Cochinillo Lechal con **Gástrico** de Hierbas Salvajes y Blinis de Tomate Concase y Espárragos verdes trigueros". I've never seen this word used like this. Thanks for any suggestions.

Back to sweet and sour sauce: AGRIDULCE.- Una salsa salada-azucarada, un gástrico, se consigue reduciendo vinagre de vino con azúcar. Se deja reducir hasta obtener jarabe, es decir cuando se evapora casi todo el vinagre.

the gástrico in the link recipe seems to be like a reduction of a sweet and sour sauce (sugar/vinegar) so this not the same. Possibly stuffing as you think (i.e. gastronomic)

Whoa! My own wild guess was (since they do it in Santo Domingo and other places), the fresh plant stuffing (actually, banana leaves or aromatic plants) you put in a whole cochinillo when it's roasted al fresco over a fire. Charles is on the right track, but the term is commonly expressed in French:

Gastrique is a thick sauce produced by a reduction of vinegar or wine, sugar, and usually fruit. It is often served over meat or seafood to add a fruit flavor to the dish. It is made in its simplest form by caramelizing sugar and then adding vinegar.

Thanks to all and Merry Christmas! It's basically akin to the sweet-sour sauce recipe I know, except for the part in the Chinese version where cornstarch is added in the end, failing time for due reduction (restaurant cheats).

OK, I'm going to stick my neck out and offer this as an answer. Refs. in discussion; viz. the cochinillo recipe link provided by Parrot and this definition posted by me:

The alternative form gástrica throws up further refs.:
