Pressue cookers
In a manual from Spain for translation to British English. Part of a pressure cooker, incorporated into the lid. A curved bar running across the top that hooks into "orejones" on the body of the pressure cooker and is then pulled upwards by turning a knob to spring load the bar and hold the lid firm against the body. An example is visible at:

crossbar/cross bar
¨The Pressure Magic has a crossbar over the top of the lid that serves as a backup for the two safety steam valves. To seal the pot, the cook turns the knob in the middle of the crossbar, raising the crossbar until it is firm against the two steel safety clamps.¨

: Yes, as I stated in the discussion. It should refer to the bar, not the stirrups on the side.

Comment: "Many thanks. This sort of design seems to be relatively common in Spain, but not so elsewhere, so seeking equivalents is tricky"

lid lock, lock handle, locking mechanism
I've seen the locking mechanism described as a 'lid system' , 'turn-to-lock handle' or 'device for locking a lid' (that would be too cumbersome a description though)
