Mr. Z, a small-town banker and lifelong outdoorsman, says he “just came unglued” when he saw what was going on. The steps he took next have thrust him into the center of one of the stranger fronts of the endless warfare over dwindling salmon runs in the Pacific Northwest.

péter les plombs
I prefer not to suggest answers in the English to French, but here goes:-
"To come unglued" = to fly into a rage, to lose control, to blow a fuse, to hit the ceiling.
Whilst I'm no expert on French equivalents, I know "péter les plombs" or "péter un plomb" fits well - there are undoubtedly many more.
NOTE that the term for the glossary should be "come/came unglued"

Comment: "I have based my choice on the definitions of the term and what register to keep in my text. So I wrote "il est sorti de ses gonds" which is less familiar but all the same.
Thanks everyone!"

démonté/décontenancé/déconcerté
Peut-être aussi bien "interdit/interloqué", mais là on perd l'image de la dissolution, de la perte de cohésion.
