Here is another item from the menu I'm translating. I'm finding it hard to understand how beignets can be cooked like a tartiflette, or does it just mean that they contain Reblochon?

Basically, they're ham 'n' cheese fritters. In English, we often call tartiflette a cheese melt but I would think that would be obvious here from the frying process involved.
Personally I would avoid saying anything about the type of cheese and whether onions and potato etc are involved. Unless you know the chef you can't be sure.

: Maybe 'du Nord' is the tip-off that another cheese is substituted for Reblochon. Savoie isn't exactly northern.

Thanks. Yes, it probably isn't Reblochon but we can't be absolutely sure of anything, really

tartiflette fritters/beignets
I think this is beignets with reblochon, potatoes and ham – the ingredients of a tartiflette, in a beignet.
Despite 'façon', I think this describes the ingredients rather than the method. See links for 'quiche façon tartiflette' and the same for "omelette façon tartiflette'.

I'd definitely leave the 'tartiflette' in there – it's a stand-alone, known French dish, like, say, beef bourgignon or quiche lorraine.
I got Google hits for stuffed roast rish, pasta, savoury loaf cake, pancakes, samosas, risotto, pizza, soup, cauliflower, canapés, all with the ingredients of tartiflette, described as 'façon tartiflette'. http://www.google.com/search?q="façon tartiflette"&hl=en&cli...

: I do not think people in North of France (my home region) would use Reblochon, they would prefer Maroille

: And if it were even farther north (Belgium) it would be Herve./It's a cheese, in fact a famous cheese, and it's used for tartiflette in Belgium.
